I’ve made this meatloaf (based on an Everyday Paleo recipe) twice now. Little Boy dived right into it and declared it delicious. Hubby, who rarely gives food praise, said he liked how it didn’t need ketchup with it. It was also enjoyed by both sets of Little Boy’s grandparents when I served it for his birthday dinner.
1 onion, diced (can sub green onions)
2 lbs ground beef (10% fat)
4 ounces ground liver (optional)
1 cup almond meal
2 eggs (or 4 eggs whites)
1 (6 oz) can tomato paste
1 tbsp minced garlic (about 3 large cloves)
1/2 tbsp sea salt
2 tbsp dried basil
1 tsp marjoram (or oregano)
fresh ground black pepper to taste
Mix all ingredients in a large bowl then put into a large loaf pan. Bake in preheated oven at 350 F for one hour.
